The origin of the meringue: a cloud of sugar with a refined history

The first mentions of meringue date back to the 17th century, and several European regions claim its origin: German-speaking Switzerland, Lorraine and Northern Italy are just some of the localities battling it out… But one thing's for sure: it's in areas where the pâtisserie tradition is alive and thriving that the technique has been adopted and perfected.

French meringues

A resolutely traditional and featherweight meringue recipe, we use the French method to make our Large Meringues. Light with a beautifully crisp bite and a fragile aspect, our French meringue is sweeter in the mouth, melting quickly on the tongue. It often stirs up nostalgic memories, in sweet delight.

Swiss meringues

For our Meringue Assortment, this time we’ve use the Swiss method. Finer and melting even more quickly on the tongue, with a silk-smooth texture and a more caramelised colour, Swiss meringue is less sweet on the palate, more stable and denser.

Finally, before being gently baked at a low heat, which is what gives them their beautiful white shade, we add hazelnut, almond and coconut powder to the egg whites… A recipe masterfully crafted by our biscuitiers.
