Calling all foodies, Lillikougs® are a wonderful example of the incredible talent of our stunning region. Accompanied by a slice of pineapple and a scoop of vanilla ice cream, our Maison's recipe is a wonderful example of a "living tradition"…

For 1 person, you need:
*Tablespoon
Step 1 – The pineapple
Using a sharp knife, start by cutting off the top of the pineapple.
Next, cut the fruit from its skin by peeling around it with the knife.
Cut a slice of around 3-4 cm in thickness.
Remove the core from this slice using a cookie cutter (or an apple corer or knife).
Step 2 – The caramelised syrup
Melt 40g of chilled butter in a pan.
Add in the slice of pineapple and fry for 2-3 minutes on each side.
Put the pineapple slice to one side.
In the same pan, deglaze by adding 4 tablespoons of Lillikoug® syrup.
Stir and then set aside the caramelised syrup for later.
Step 3 – Finishing touches and presentation
Place the slice of fried pineapple on a plate.
Cut the Lillikoug® in half along its width.
Place the bottom half in the middle of the pineapple.
Add a tablespoon of vanilla ice cream onto the Lillikoug®.
"Close" the sandwich by placing the top half of the Lillikoug® onto the vanilla ice cream.
Lastly, pour over a tablespoon of the caramelised syrup.
Finish your creation by sprinkling over the shredded coconut and lime zest.
